Tonight's Dinner Simple baked eggs

No need to let your eggs go to waste in the refrigerator. This quick baked egg recipe uses up your eggs and flavors them with garlic, tomatoes and spinach.

There is nothing more simple than baked eggs. They cook up fast, and you can add whatever fillings you desire. This time we took farm fresh eggs and paired them with summer tomatoes and lots of fresh herbs and garlic. The best part about this dish is that you can be done in less than 20 minutes from start to finish!

Simple baked egg recipe

Serves 2

Ingredients:6 large eggs4 tablespoons heavy cream2 small chopped tomatoes1/2 cup chopped fresh spinach1/2 teaspoons minced garlic1/2 cup Parmesan cheeseSalt and pepper, to tasteDirections:
    Add two tablespoons heavy cream into two large gratin dishes. Set aside.In a saucepan, add a drizzle of olive oil, tomatoes, spinach and garlic. Cook over medium heat until the basil and tomatoes are soft, about five minutes.Split the tomato/spinach/garlic mixture equally between the two gratin dishes. Add three eggs (I find it easiest to crack the eggs into a separate dish to ensure the yolks stay whole.). Add salt and pepper (to taste) and sprinkle each dish with one-quarter cup Parmesan cheese.Put gratin dishes on a baking sheet and place under broiler for six minutes, until the whites of the eggs are almost cooked. If the eggs are not cooking evenly make sure to rotate the pan. The eggs will continue to cook in the hot dish after being taken out of the oven, but if you want your eggs more firm, leave in for one or two minutes longer. Let eggs rest for one minute before serving.

FitnessIn the post-holiday rush to jump on those New Year's resolutions and pay off the bills from accelerated seasonal spending, time and money are top concerns for staying fit in 2010, one survey says. Here a fitness expert gives her two cents on the fitness trends to follow and why.

The American Council on Exercise (ACE) surveyed its network of personal trainers, group fitness experts, advanced health and fitness specialists and lifestyle and weight management consultants to determine the top fitness trends for 2010. The findings conclude that consumers will be looking to arrange their fitness regimens with time and money in mind. Tighter budgets and hectic schedules will also bring unique and efficient workouts to the forefront of the fitness world. Sammie Kennedy, a personal trainer who founded Booty Camp Fitness in Canada, says the key to staying fit and trim is consistent, motivational exercise and healthy eating. Here's what the fitness expert has to say about ACE's top fitness trends for 2010.

Fitness trend #1: Cost-conscious workouts

Kennedy: This is definitely a trend that will remain popular, especially in a recovering economic climate. Having trained at a gym, I've seen a lot of people splurge hundreds of dollars on annual memberships come January. By the time March rolls around, though, they aren't using it anymore and are out quite a bit of cash because gyms simply don't offer the motivational tools for you to keep coming. As a matter of fact, they bank on the fact that you won't come. If everyone used that membership, there would be no room. To stay on a budget, try workouts that offer a pay-as-you-go type option. That way you pay for say, four or eight weeks at a time. If you find you're still committed a few weeks in, then you can continue, but if not, you aren't locked into a contract.

Fitness trend #2: Group training

Kennedy: The trend in Canada definitely sees women moving from one-on-one personal training to group fitness sessions. Not only is it a more cost-effective way to work out, but a group setting provides energy, enthusiasm and accountability. Knowing that your instructor and peers expect to see you come out means you're less likely to skip a session. In the long run, that means you'll see better results, too.

Fitness trend #3: Time-efficient workouts

Kennedy: People are always pressed for time, so doing short bursts of activity is becoming a popular concept. For it to be most effective, there are a few things to remember: You still need to warm up and cool down before doing the physical burst of activity. The intensity of the workout needs to be consistently high; working out at the same pace as a 60-minute workout won't yield the same results in a shorter one since you will have to train at higher heart rate intervals to yield the same fat-burning results

Fitness trend #4: Exergaming

By integrating fitness-based video games into their programming, clubs will offer unique exercise sessions for game-lovers and those looking for variety within their workouts. ACE studies on exergaming-type systems, including Nintendo's Wii Sports and Wii Fit and the PC-based Dancetown, show these alternative fitness options are motivating, but can't replace a dedicated gym or sport routine.

Kennedy: Exergaming is a trend that shows no signs of slowing down. Fitness has shifted to be more of a fun-oriented activity and less of the dreaded after-work-straight-to-the-gym type routine. That's fantastic because if you're having fun, you're more likely to do it, which is great for both body and mind.

Fitness trend #5: Boomer-specific programs

Kennedy: It's great that all ages are reaping the rewards of staying active. Aging adults have access to low-impact exercises such as tai chi and aqua aerobics so that there isn't as strong an impact on fragile bones. We'll likely also see an emphasis on resistance training for older adults to increase bone and muscle strength. It's never too late to start taking care of your body.

Fitness trend #6: Functional training workouts

Functional training workouts will increase in variety, including popular suspension training tools such as the TRX. The portability and time-efficiency of these workouts will appeal to people looking to stay fit at home, the office, the gym or while traveling.

Kennedy: There are so many amazing exercises you can do with tools like the TRX. Especially for people who are constantly traveling and can't lug a lot of equipment, this is a great way to squeeze in some functional training – just be sure to secure it properly! Even as a cheaper alternative, pair creativity with resistance bands of varying tensions. These tools give the user total control - whether that's resistance or level of difficulty. Plus there's the benefit of being able to use a full range of motion and multiple joints and muscle groups simultaneously while training.

Fitness trend #7: Health and fitness awareness

Kennedy: Obesity and illness cost the government money. Really, it's in the government's best interest to encourage a healthy population. We're seeing grade schools put a stronger emphasis on nutrition and physical education so that kids carry this learning with them through adult life. The workplace is observant of this, too; regular exercise leads to a boost of the immune system which means less sick time. Companies are offering gym memberships or bringing activity into the workplace, like a lunchtime yoga class, to keep their employees moving and healthy. At the Booty Camp head office, we take turns cooking healthy lunches for each other -- groceries covered, of course -- to encourage health since we are so focused on fitness.

Fitness trend #8: Importance of professional credentials

Kennedy: I have to say, I'm disappointed that this is considered a trend -- this should be the norm. Trainers and instructors for any workout regime should always be qualified and certified through an organization like Can-Fit-Pro (Canadian Fitness Professionals) or CPTN (Certified Personal Trainers Network). You risk suffering from injury if you don't have an instructor who holds the proper credentials; certified instructors are educated on proper form and technique, thereby avoiding injury.

Fitness trend #9: Specialty exercise classes

Specialty classes such as ethnic dance, hula hooping, pole dancing and Zumba will remain popular due in part to the continued success of shows like Dancing with the Stars. Fusion-type classes will be popular among fitness enthusiasts that want to switch up their typical workout programs.

Kennedy: Specialty exercise classes are definitely trendy. The key is to avoid doing the same exercise all the time or else your body gets used to it; if you're going to take part in a trend like hula hooping, you need to complement that with another activity for effective results or find a program that incorporates a variety of exercises within its structure.

Fitness trend #10: Fitness tools

Technology is continuing to infiltrate the fitness world. The use of tracking and online training and scheduling tools will increase in the coming year with more people looking to better gauge their progress by accessing and monitoring details of their fitness programs. Some popular examples of tracking gadgets include GoWear fit and Fitbit, while online tools such as TrainingPeaks software offer fitness programs and meal plans that people can access 24/7. Mobile applications are even bringing fitness on-the-go through iPhone applications and other downloadable programming.

Kennedy: Personally, I don't use a lot of tools to monitor my workout; I prefer to simply check my heart rate. However, people are taking advantage of the apps they can load onto their iPhones and BlackBerrys so there is no shortage of or slowing down for fitness training tools.

No, we don't see couch potato syndrome on the list here, so there's no reason not to follow the trends and get fit, 2010-style.

After last night's episode of the HBO show Boardwalk Empire, people are left wondering what is Hoppin' John? Although the dish originated in West Africa, it is the American South that gets the credit for the catchy name. The meal consisting primarily of rice and beans is often eaten on New Year's Day and is thought to bring luck to those who eat it. I'll consider myself lucky if I can just get a bite of this zesty Cajun fare.

There's only one man I trust to make a dish called Hoppin' John--Food Network star Emeril Lagasse so this recipe is adapted from his version. Gather up your butter loving friends and start practicing your drawls because no matter where you are from, you'll love this Southern comfort food.

Hoppin' JohnIngredients: 1 tablespoon olive oil1 large ham hock1 cup onion, chopped1/2 cup celery, chopped1/2 cup red pepper, chopped1 tablespoon chopped garlic1 pound black-eyed peas, soaked overnight and rinsed1 quart chicken stockBay leaf1 teaspoon dry thyme leavesSalt, black pepper and cayenne to taste3 tablespoons finely chopped green onion3 cups steamed white riceDirections:
    Heat oil in a large soup pot, and sear all sides of the ham hock. Add the onion, celery, red pepper and garlic; cook for a few more minutes.Add the black-eyed peas, stock,  thyme and seasonings. Bring to a boil, reduce the heat and simmer for 40 minutes, or until the peas are creamy and tender, stir occasionally. Add more stock if the mixture starts to look too dry.Add more salt, pepper, or cayenne if needed and garnish with green onions.Serve over rice.

Bourbon baked beans

Serves about 8

Ingredients:28 ounce can northern beans1/2 cup ketchup1/4 cup brown sugar1/4 cup maple syrupSalt and pepper3 tablespoons bourbon2 tablespoons molasses1/2 cup onion, finely diced2 strips raw bacon, cut into bite-size piecesDirections:
    Preheat oven to 300 degrees F. Grease a large casserole dish (or about 5 smaller ramekins) with nonstick cooking spray. Set aside.Whisk the ketchup, brown sugar, maple syrup, molasses, bourbon and salt and pepper. Add beans, onion and bacon, stir to coat.Pour into the casserole dish (or ramekins) and bake for about 2-1/2 hours with the top on. After 2-1/2 hours remove the top and let cook another 30 minutes.

Ingredients:2 cups all-purpose flour1/4 cup sugar2-2/3 teaspoons baking powder1/3 teaspoon cream of tartarDash of salt1/3 cup butter, cold and cut into pieces1/2 egg, beaten3/4 cup light cream1/3 cup cheddar cheeseDirections:
    Preheat oven to 400 degrees F.In a large bowl, stir the flour, sugar, baking powder, cream of tartar and salt together. Using a pastry knife, cut the butter into the mixture until it resembles coarse sand. Stir the egg and light cream into the mixture until a soft dough forms.Place the dough on a lightly floured surface and knead about 5 or 6 times. Cut out circles (we used a 1/3 cup measure). Place on a greased baking sheet about an inch apart.Sprinkle the tops with cheese and bake for about 12-14 minutes, or until golden brown.

Ingredients:1 package Texas toast1-1/2 pounds shredded chicken1/2 bottle your favorite barbecue sauce1 cup organic ketchup14.5 ounces canned tomatoes2 tablespoons Worcestershire sauce1-1/2 cups cheeseDirections: 
    To make the sloppy Joes, add the chicken to a skillet. Add barbecue sauce, canned tomatoes, Worcestershire sauce, ketchup and salt and pepper. Bring to a simmer.Meanwhile, bake Texas toast according to instructions. Once done, top Texas toast with sloppy Joe mix and a liberal sprinkle of cheese.

Ingredients:1 cup quinoa, thoroughly washed in a fine sieve (unless prerinsed)1-3/4 cups water1 (15 ounce) can black beans, thoroughly drained and rinsed1 cup frozen corn1/2 red bell pepper, seeded and finely chopped1 jalapeño, seeded and minced1/2 red onion, finely chopped1/4 cup cilantro leaves, roughly chopped1/3 cup olive oil1/4 cup balsamic vinegarSalt and pepperDirections:
    In a medium saucepan combine the quinoa and water. Bring to a boil, reduce heat, cover and simmer until all of the water has been absorbed. Do not remove the lid. Remove from heat and let stand for 5 minutes. Fluff with a fork and let cool slightly.In a large bowl, combine the cooked quinoa, black beans, corn, red bell pepper, jalapeño, red onion and cilantro. Mix well.In a small bowl whisk together the olive oil and balsamic vinegar and pour over the quinoa mixture. Toss to coat. Season with salt and pepper, as needed.

Tonight's Dinner Tex Mex mac cheese recipe

Mac & Cheese Gets A Tex Mex TwistMac and cheese is always a family favorite because it's easy to make, there's a ton of cheesy goodness and you can usually get a couple of meals out of the baked pasta dish. But instead of the same old melted cheese and pasta, why not spice things up a bit and add some ground beef and taco seasonings? You'll get a new mac everyone will love.

The classic mac and cheese is pretty simple to make: Boil some elbow macaroni, melt some cheese, mix them together, throw them in a casserole dish and bake. What comes out is an ooey, gooey, cheesy dinner that brings smiles to everyone's faces. But why limit yourself to just cheese and pasta? Sure, there are a zillion different kinds of cheeses out there and about half as many types of pasta, but adding meat brings the dish to new heights. Then if you add some taco seasoning and tortilla chips like Parents magazine suggests, the baked pasta doesn't just become even more enticing, it's guaranteed to bring smiles to even your pickiest eaters' faces.

Tex Mex mac & cheese

Serves 8

Ingredients:1 pound ground beef1 onion, chopped2 tablespoons tomato paste1 tablespoon chili powder, divided2 teaspoons ground cumin, dividedSalt and pepper to taste1/4 cup water12 ounces rotini pasta3 cups milk3 tablespoons flour3 tablespoons butter1 cup shredded cheddar cheese2 cups Mexican blend shredded cheese1 cup tortilla chips, crushedDirections:
    Preheat oven to 375 degrees F. Grease a 9 x 13-inch baking dish and set aside.Cook beef and onions in a large skillet over medium-high heat until browned. Stir in the tomato paste, two teaspoons chili powder, one teaspoon cumin, salt, pepper and water. Simmer for two minutes and set aside.Meanwhile cook the pasta according to the package directions, drain and set aside.While the pasta cooks, make the cheese sauce by melting the butter in a large saucepan over medium-high heat. Add the flour and cook for one minute. Stir in the milk, remaining chili powder, ground cumin, salt and pepper and simmer for two minutes, stirring constantly, until thick. Reduce the heat to low and gradually stir in the cheddar cheese and one and a half cups of the Mexican blend cheese until completely melted and smooth.Stir the cheese sauce into the cooked pasta. Spoon half of the pasta mixture into the prepared baking dish. Top with the beef mixture and then the remaining pasta mixture. Cover the top of the pasta with the crushed chips and the remaining cheese. Bake for 30 minutes or until hot and bubbling. Serve immediately.

DIY Latte With A TwistWant your at-home latte to have that same sparkle and taste as the ones you pay way too much for at specialty cafes? Follow these easy step-by-step directions and add some art to the top of your cup!

You know the best part of this at-home art tutorial? It doesn't require mega expensive equipment or even a steamer. All you need is an espresso maker (we love our Nespresso) or instant espresso, a milk frother and milk. You'll be on your way to trendy coffees in no time!

Supplies:About 3/4 cup whole milkNespresso capsules (or instant espresso)Milk frother (we like this one)Instructions:1Prepare the latte

If using your machine, place the capsule in the top, select the size you'd like and make your latte.

If you're using instant espresso, follow the directions on the container.

2Heat and foam the milk

Pour milk into a metal or ceramic jug and heat to about 110-120 degrees F. Holding the pitcher with your left hand, place the frother into the jug, deep into the milk but not touching the bottom.

Turn the frother on and tilt slightly so the milk swirls a little. Keep frothing your milk until all of the bubbles disappear, about 3 minutes.

3Lightly pour

Tilting the jug, pour the milk from a distance into the coffee.

Once you see the milk start to appear on the top of the coffee, carefully hold the stream of milk in the same place, but wiggle the milk pitcher back and forth as you make a ringed circle. When the milk in your pitcher is almost gone, swing the milk up to create the indentation and tip of your heart.

A skinny, easy Oktoberfest menu

Light Recipes For OktoberfestOktoberfest is a time honored tradition. Every year from the end of September to the beginning of October, thousands flock to Germany to partake in this two week long bratwurst eating, binge drinking celebration. If you are stuck in the U.S. this year, don't let that deter you from joining in on the fun. Host your own Oktoberfest party with this easy, delicious and lighter menu! Plus, you can celebrate all month long!

It's no surprise that the key ingredient in most Oktoberfest menus is beer, right? These recipes below are no different, although they are a bit lighter than the normal fare you'd find in Germany. Instead of relying on butter, oil and fat, I relied on the beer to work as the thickening agent without adding all of the extra fat and calories! Serve these dishes with a glass of your favorite lager and enjoy your Oktoberfest from the comfort of your own home! To really make it authentic, dress up in lederhosen or in a German beer maid outfit!

Light whole wheat pumpkin beer bread

Yields: 8 slices

Ingredients:1 cup whole wheat flour2 cups all-purpose flour3 teaspoons baking powder1/2 teaspoon sea salt2-3 teaspoons pumpkin pie spice2 tablespoons brown sugar2 tablespoons white sugar12 ounces beer (I used Sam Adams Oktoberfest)1 cup canned pumpkin2 tablespoons melted margarine (*optional)Cooking sprayDirections:
    Preheat oven to 375 degrees F. Grease a loaf pan with cooking spray.Combine flours, baking powder, salt, pumpkin pie spice and sugars. Gradually add the beer and canned pumpkin. Mix until fully combined. Add additional pumpkin pie spice for flavor.Pour mixture into the loaf pan and then pour melted margarine over it.Bake for 50-60 minutes until loaf is fully cooked (a toothpick comes out clean when inserted).

Ingredients:

Salad:

8-10 baby red potatoes1/2 cup chopped yellow onion1/4 cup chopped leeks (or chives, green onions)1/4 cup chopped parsley1/3 cup chopped pickles (use sweet or dill)2 tablespoons beer (I used Sam Adams Oktoberfest)2 tablespoons red wine vinegar (can use cider vinegar)

Dressing:

2 tablespoons of olive oil3/4 cup chopped yellow onion3/4 cup of beer (used the same beer)1/4 cup of red wine vinegar1 teaspoon sugarSalt and pepper2 tablespoons of yellow mustardDirections:
    In a large pot, boil potatoes in enough water (so that they are submerged) with a dash of salt for about 10-15 minutes, or until potatoes are tender (but not too soft! Skin shouldn't come off easily). Rinse and set aside.Once potatoes have cooled, cut into fourths and place in a bowl or dish. Add in onions, leeks, parsley and pickles; stir. Then add in vinegar and beer and gently coat. Set aside.To make the dressing, heat oil in a saucepan. Add onions and cook until tender. Add the beer, vinegar, sugar and salt and pepper. Heat until sauce has thickened and reduced. Add in mustard and take off heat.Pour dressing over salad, add additional salt and pepper to taste and enjoy!

Yield: 8 servings (about 3 ounces of pork and 1/2 cup of bacon, cabbage)

Ingredients:1 (2 pound) boneless pork loin4 teaspoons paprika, divided into two2 teaspoons dried thyme, dividedLiberal dashes of salt and pepper1 teaspoon dried sageCooking spray1 clove garlic, chopped6-7 slices of bacon, chopped (will equal about 3/4 cup)2 cups of chopped yellow onion2 pounds or so of very thinly sliced cabbage (10-12 cups)2 tablespoons tomato paste1 bottle dark beer (used Oktoberfest)1 tablespoon Dijon mustardDirections:
    Preheat oven to 350 degrees F. Spray a large Dutch oven with cooking spray.Rub pork loin with 2 tablespoons of paprika, one tablespoon of thyme, sage and salt and pepper.Heat olive oil in a large pan. Add pork and cook for five minutes, allowing the meat to brown on all sides.Remove pork from pan and place in greased Dutch oven.In the same pan, add bacon. Cook for about three to four minutes. Add cabbage, garlic and onion. Cook until cabbage is wilted, usually about 10 minutes. Stir mixture to ensure nothing burns.Add in tomato paste and remaining spices. Take off heat, pour over pork loin and bake for about 1 to 1-1/2 hours, or until pork is white in the center.
